Healthy Coconut Yogurt Parfait

A healthy gut keeps the doctor away! Did you know that 70-80 % of the immune system resides in the gut? In order for our organs to function properly, the immune cells in your gut need to be able to sort through all you ingest and tell the difference between healthy bacteria and pathogens, toxins, nutrients, and work to protect the body. One way to keep the bad bacteria out and the good guys in is through eating fermented foods. I love eating these types of foods, because they are easy to make, cost effective, and they help keep our immune systems healthy and strong. Have you tried coconut yogurt? Check out my recipe!

Healthy Coconut Yogurt Parfait

Yield 2-3 servings

Coconut Milk Ingredients:

2 cans organic full fat coconut milk

2 capsules probiotic (i use pure encapsulations Probiotic 50B)

1 tsp vanilla extract

1 tsp maple syrup

Instructions:

1- Shake coconut milk cans very well. Open and pour into a bowl. Empty your probiotic capsules. Use a wooden spoon to stir (metal spoons can react negatively to probiotics) Stir until creamy and smooth. 

2- Cover the mixture with a cheese cloth and secure with a rubber band

3- Let the yogurt activate for 24-48hrs in room temperature. Note: the longer it sits-the tangier tasting the yogurt will be.

4- Once its ready to your liking, cover with a lid and refrigerate until cold. If you want to the yogurt to be very thick- line the yogurt with 2 layers of cheese cloth and set over a mixing bowl.

Note: if the yogurt doesn’t ferment properly it will smell very bad

Toppings Ingredients: 

Homemade Granola (see granola recipe)

Honey crisp Apple, sliced

1/4 cup Raw Almonds

1 tsp cinnamon 

option-fruit compote (recipe to come soon!)

Instructions:

1- Once the coconut yogurt is ready, add the homemade granola, apples, raw almonds, and cinnamon. Serve!
