Ginger Spiced Quinoa Porridge

Want to get really creative with your porridge? Have you tried Quinoa for breakfast? Is so delicious, satisfying, and easy to make. Its also great if you have some leftover quinoa and want to eat it for breakfast with some nut milk, fruit, and superfoods. Yum!. Enjoy this quick recipe!

Ingredients:

1/2 cup Quinoa, soaked

1 cup (nut milk or raw milk of choice)

1/2 cup of fruit (i used blueberries and bananas

1/4 cup walnuts, chopped

1 Tbsp chia seeds

1 Tbsp ground flax seeds

1 tsp turmeric 

1 tsp grated fresh ginger

1 cinnamon stick 

1 Tbsp maple syrup

pinch of salt

optional add ons:

toasted nuts, dark chocolate chunks, berry compote, vanilla extract 

Instructions

  1. Rinse and drain the quinoa.

  2. Place it in a small saucepan and add the nut milk, cinnamon stick, and a pinch of salt. Bring to a high simmer, cover and reduce heat to a low simmer for 15 minutes.

  3. After about 5 minutes, add the pumpkin spice, turmeric, chia seeds, flaxseeds, and maple syrup.

  4. After 15 minutes or so, remove the pan from the heat and let the quinoa sit for 5 more minutes or until the nut milk is absorbed and the quinoa is cooked and has a creamy consistency.

  5. Add the walnuts and assemble the fruit

  6. Ready to serve!
