Mom’s Classic Chicken Soup

There's a special kind of magic in homemade comfort food, and today, I'm sharing not just my go-to bowl of warmth but also the recipe, because we all need a little extra love sometimes. Here's to the healing power of a simple bowl of goodness!

Ingredients:

* 1 whole chicken (approximately 3-4 lbs)

* 8 cups organic chicken broth

* 2 carrots, peeled and chopped

* 2 celery stalks, chopped

(Option to blend vegetables of choice into the soup-I to this as well)

* 1 onion, diced

* 3 cloves garlic, minced

* 1 cup noodles or rice (your choice)

* Salt and pepper to taste

* Fresh herbs (thyme, bay leaf, parsley) for an extra burst of flavor

* root vegetables of choice (i added parsnips)

Instructions:

  • In a large pot, let the magic begin by bringing the whole chicken, chicken broth, carrots, celery, onion, and garlic to a gentle simmer. Allow it to dance together until the chicken is tender and cooked through, usually about 45 minutes to 1 hour.

  • Carefully remove the chicken from the pot, shred that wholesome goodness, and return it to the pot.

  • Introduce your chosen noodles into the mix and let them join the party until they reach that perfect state of tenderness.

  • Season the concoction with a sprinkle of salt, a dash of pepper, and a generous handful of fresh herbs for that extra touch of love.

  • Ladle that liquid gold into your favorite bowl, allowing the warmth to envelop you and work its soothing magic.
