JO's Simple Lentil Soup

There’s nothing like a nourishing and comforting soup when it comes to comfort my go to is lentil soup. I love making it at least 1x week. Oh how simple and delicious it is. Check out my recipe!

Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion (chopped)

  • 3 cloves garlic (minced)

  • 2 medium carrots (peeled and chopped)

  • 2 celery ribs (chopped)

  • 3 asparagus, chopped

  • 1/2 head cauliflower, cut into florets

  • 2 cups brown lentils or green

  • 6 cups vegetable broth

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/2 tsp ground ginger

  • 1 teaspoon salt (or to taste)

  • 1 bayleaf

  • parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic. cook for 2-min.

  2. Add carrots and celery. Cook, stirring frequently for about 4-5 minutes. Add the asparagus and cauliflower and cook for another 3-5 minutes.

  3. Add the lentils, vegetable broth, cumin, coriander and ginger. Stir to incorporate everything.

  4. Bring to a boil, then lower heat to a simmer and cook for about 30 minutes, until the lentils are tender and the soup has thickened. Option to add water or more vegetable broth for a more brothy soup. Garnish with parsley. Sometimes I add some broccoli sprouts and some avocado too. Ready to eat
